Egg is the best combination of healthy fats and proteins, perfect for Ketogenic diet. But if you are like me and do not eggy taste in egg recipes (:-P), the options do get limited. This is one of the recipes which do not taste eggy and you can customize it any way you like. I like to add a lot of veggies to this recipe that make it flavorful.
In order to prevent eggy taste, this Butter Omelette roll should be cooked on slow heat. If you like your Keto Omelette Roll to be fluffy, whip the egg whites separately in fold it into the mixture before you start preparing the roll.

Ingredients:

3 eggs
2 tbsp butter
Vegetables of choice ( I used red capsicum and chives)
salt to taste
Instructions:

1. Add 3 eggs to a bowl
2. Whisk and mix them up
3. Strain the mixture
4. Add scallions, capsicum and salt
5. Whisk and mix again
6. Add butter to warm pan
7. Add thin layer of the mix to pan
8. Swirl it around and let it cook slightly
9. Add butter on top and roll the omelette in the pan
10. Move the omelette to one side of the pan
11. Add butter to rest of the pan and pour more mix
12. Repeat the process for rest of the egg mixture
13. Transfer to plate and cut the roll across
14. Garnish and Enjoy your Butter Omelette roll
