I am hell bent on eliminating all the excuses you can give for going off Keto and on this journey, I discovered that you can enjoy special occasions in a better way when you are on Keto rather than not. Keto recipes are far more decadent, flavorful and to top it all, they leave you satisfied rather than wanting for more :D
As a result, I decided to celebrate a Keto friendly Birthday this year and this Keto Macadamia nuts cake was the highlight of my day :D (food wise :-P).
It was super easy to make and I enjoyed it for the next 3 days as well :-P. This Keto friendly Macadamia nuts cake is so rich and heavy that it will leave no room for dissatisfaction. You can enjoy it for long by refrigerating and it will last for up to 4 days! I like it best when warm so I cut the slice, put it on a microwave safe plate and microwave for 10-15 secs, Yummy!
The cake itself is so rich and flavorful that you can even skip the ganache but I wanted make it for my Birthday so decorations were a must!
The recipe for the cake is so simple, just mix all the ingredients together well and pop it in the oven to bake. Even the chocolate ganache is pretty simple to make and use.
For the chocolate ganache, use Keto friendly Chocolate (I used home made), add whipping cream to it, mix it well and pop it in the fridge for few minutes. Once the cake has cooled down and ready to decorate, take out the ganache from fridge and whip whip whip. The more you whip, the lighter it will get in color and texture. Once the ganache is at desired consistency, cover the cake with it!
You can keep the left over ganache(if any) to lick off later :-P

Ingredients:

Keto Macadamia cake:
2 cups Almond flour ( I use home made, recipe here)
1+1/3 cup Macadamia nuts ground
1 cup Cocoa powder
1 cup Erythritol
1/4 tsp Salt
1/2 tsp Baking powder
2/3 cup Whipping cream
1 tsp Vanilla essence
6 eggs
Keto chocolate ganache:
170 g Keto friendly chocolate
1 cup Whipping cream
Instructions:

Keto Macadamia Cake:
1) Preheat the oven at 180 Celsius
2) Add 2 cups Almond flour to a large bowl
3) Add 1+1/3 cup ground Macadamia nuts
4) Add 1 cup Cocoa powder (I used Cadbury's)
5) Add 1 cup Erythritol, 1/4 tsp salt and 1/2 tsp baking powder
6) Mix well and keep this dry mixture aside
7) In a separate bowl, take 6 eggs
8) Add 2/3 cup Whipping cream and 1 tsp Vanilla essence
9) Mix these ingredients well
10) Add the egg mix to the dry ingredients
11) Mix thoroughly
12) Transfer the contents to a lined cake pan
13) Bake the cake at 180 Celsius in convention oven for 45 minutes
14) Turn off the oven and let the cake sit for an hour more
15) While the cake cools down, prepare the Chocolate ganache
Chocolate ganache:
1) Take 170 g Keto friendly chocolate at room temperature in a bowl
2) Add 1 cup Whipping cream to it
3) Mix thoroughly
4) Refrigerate for 15 mins
Decorate the cake:
1) Take out the ganache from fridge and whip it well to make it light
2) Cut the cake into 2 layers
3) Spread the ganache between the cake layers
4) Cover the cake in ganache all over with spatula
5) Decorate further as desired
